1Preheat the oven to 350°F.
2Melt the butter in a medium saucepan over medium heat. Add the diced apples, brown sugar, and cinnamon. Cook and stir about 5 minutes, until the apples soften.
3Roll out the pie dough. Pour the cooked apples into the center, leaving a 1½-inch border around the edges. Scatter the quartered Rolos over the top.
4Fold the edges of the dough up and over the filling to create a pleated, rustic border.
5Bake 30–35 minutes, until the edges are golden brown. Remove and let cool completely.
6Before serving, dust with powdered sugar.
